What happens to stream flow during a flood in terms of stream discharge and stage?

Can someone please describe what happens to a stream flow during a flood in terms of stream discharge and stage? (And can anyone define for me what stream discharge and stage actually ARE, as my textbooks don't bother to define them at all?)

Discharge is the volume of water moving past a point over a specified period of time. It would be like cubic feet per second or cubic meters per second.
Stage (?) I am not familiar with how the term is used in stream flow... other than flood stage.
